We found the Breville BOV860BSS to be a capable oven that shares the same excellent build quality and Element IQ system as its bigger sibling. The question is whether the $50 savings over the BOV900BSS makes sense when you lose dehydrate, slow cook, and proof functions plus 0.2 cu ft of interior space. For most people, we recommend spending the extra $50 on the BOV900BSS. But if you know you will never dehydrate or slow cook, the BOV860BSS is still a top-tier countertop oven.
